Chicken Pesto on Damper Roll

Serves 1

  • 1 Tip Top® Damper Roll
  • 120g chicken breast, uncooked
  • 1 small handful rocket lettuce
  • 4 cherry tomatoes, cut in half
  • 1 tablespoon basil pesto
  • 1/2 teaspoon chilli flakes
  1. Pan fry chicken breast fillet until cooked through with golden brown colour on both sides
  2. Allow chicken to cool
  3. Spread pesto onto bun base. Add chicken. Top with cherry tomatoes, rocket and chilli flakes. Place other half of bun on top
