 
Whipped Gingerbread Butter and Berry Compote
Serves 4
INGREDIENTS:
- Original
- 4 Tip Top English Muffin
- 80g butter, softened
- 1 tsp honey
- 1 tsp mixed spice. Ground ginger, ground cinnamon, ground nutmeg
- 1 Orange, zested
- 1 cup frozen mixed berries
METHOD:
- Place butter, honey, spices and orange zest into a bowl. Using electric beaters, whip until light and fluffy
- Put berries into a small saucepan over low heat and cook for 5 mins until softened and broken down
- Half and toast the English muffin
- Spread muffin with whipped butter and spoon over the berry compote
