Whipped Gingerbread Butter and Berry Compote

Serves 4

INGREDIENTS:
  • Original
  • 4 Tip Top English Muffin
  • 80g butter, softened
  • 1 tsp honey
  • 1 tsp mixed spice. Ground ginger, ground cinnamon, ground nutmeg
  • 1 Orange, zested
  • 1 cup frozen mixed berries
METHOD:
  1. Place butter, honey, spices and orange zest into a bowl. Using electric beaters, whip until light and fluffy
  2. Put berries into a small saucepan over low heat and cook for 5 mins until softened and broken down
  3. Half and toast the English muffin
  4. Spread muffin with whipped butter and spoon over the berry compote
