Christmas Smashed Avocado and Halloumi

Serves 1

INGREDIENTS:
  • Original
  • 1 Tip Top English muffin
  • ½ an avocado, diced
  • 30g Halloumi
  • 1 tsp olive oil
  • ½ lemon
  • Pepper to season
METHOD:
  1. Using a tree-shaped cookie cutter, cut 2 x Christmas tree shapes from the halloumi
  2. Heat oil in a small pan over a medium heat. Add halloumi and cook for 1 minute each side, or until golden
  3. In a small bowl add diced avocado, a squeeze of lemon juice and season with pepper
  4. Half and toast English muffin
  5. Arrange avocado on top of muffin halves and top with halloumi stars
  6. Season with chilli flakes and pepper
  7. Serve with a lemon wedge
